Sweet Potato Latkes

It was great to see Elsa’s photos from her India evening….what fun. I’ve been inspired to cook and bake lately. Yesterday between my husband and I we made banana bread, sweet potato latkes, cinnamon buns and roasted veggies. It’s great to have time on the weekend to kick back and do the things you love. Here is the recipe for the latkes. They were very nice; a little sweet, a little savory.  I made ours for breakfast but it is more common to have them for dinner.


Sweet Potato Latkes

1 lb sweet potatoes, peeled and coarsely grated

1/3 cup onion finely chopped

1/4 cup flour

2 large eggs, lightly beaten

1 teaspoon salt

1/2 teaspoon black pepper

3/4 cup vegetable oil

-Grate potatoes on box grater and drain liquid in paper towel

-Stir together potatoes, onion, flour, eggs, salt, and pepper.

-Heat oil in a skillet over moderately high heat until hot but not smoking.

-Working in batches of 4, spoon 1/8 cup potato mixture per latke into oil and flatten to 3-inch diameter with a slotted spatula. Reduce heat to moderate and cook until golden, about 1 1/2 minutes on each side. Transfer latkes with spatula to paper towels to drain.

They were so good that I almost missed a chance to get a photo of the final result…snapped one shot just in time. Enjoy!



Indian Night

Yesterday I had dinner at an Indian restaurant here in Malmö. This time last year I was on a long journey in southwestern India and yesterday’s food set my mind right back.

One big difference is that on a restaurant here in Malmö, a nice bottle of red wine is easy to accomplish – the situation is quite the opposite in India.  

We ordered vegetarian kofta, dal mahkani and garlic naan. The food was so good that we ended up in the discussion during the starters (samosa and fried cauliflower) wether it was safe to eat the salad or not – just the way one talks when in India.


Here’s a picture from Gokarna taken in January 2011 with me and one of the multiple puppies that I wanted to bring to Sweden.

In this valley the beach lies where the previous picture with the puppy was taken. Here we stayed for about four weeks last year before we continued our journey south. 

I’m taking back all the talk about spring being here by the way, it’s snow-raining outside my window right now and I’m dreaming of warmer places going through photos in my computer.



Igår var vi på indisk restaurang och medan det är snöblandat regn utanför fönstret längtar jag mig bort till för ett år sedan då jag var långresa i just Indien. 

Trip to Ikea

Last weekend I made a little trip to Ikea with my husband…and came home with a new sofa!

New Job

Sorry for bad bloging. I’ve started a new job in January as the new superintendent at Augustenborg’s Botanical Roof Gardens in Malmö. It’s really fun and interesting and somewhat of a challenge to combine with my studies but hopefully I’ll find a way.

This Monday I was up on the roofs of a new mall that’s under construction here in Malmö, on top of the mall there will be a huge rooftop garden. (Since it’s a construction-site you need to wear special shoes, helmet and the lovely neon vest).

Ursäkta för dåligt uppdaterande. Jag har börjat på ett nytt jobb nu i januari, som ny föreståndare för Augustenborgs botaniska takträdgårdar här i Malmö. Otroligt roligt och intressant och en utmaning att kombinera med universitets-studier men jag är säker på att det kommer gå bra. I måndags var jag uppe på taket till Emporia i Malmö, ett köpcentrum under uppbyggnad där det ska bli en 2 hektar stor park uppe på taket (på sådana byggplatser får man ha skor med stålhätta, hjälm och härliga neon-västar).

Yesterday I did a huge closet-cleansing (well needed), today I’m hoping for more fun activities…



Igår var stora rensa-ut-garderoben-dagen, idag hoppas jag på roligare aktiviteter. 

Sunny Saturday in Pictures

My friend Sofia slept here tonight and I made us scones for breakfast.

I love weekend-breakfasts when you always have time for that extra cup of coffee. 

And the tulips I bought the other day are now in their very best stage I think.

After breakfast I decided to go out into the sunshine. 

And I met up with Ida for a walk.

We ended up at a playground before we reached our final destination.

Which were the allotment-plot that we share with four other friends. There we ate lovely mango-cake (that Ida had made of course). Today I’m wearing a knitted vintage dress and my favorite wool coat.  

Ida had a cute bow in her hair.

Then we climbed a hill and walked home.

Now I’m gonna get ready for tonight. I’m going to a dinner first and then to a exhibition-opening at this place.
