Halloween Contribution

Dear Brita,

Soo exciting to read all the Halloween-themed posts here. I’ve never celebrated Halloween (feels like quite a new thing here in Sweden or maybe I’m just living in the past) so my only contribution to today’s holiday would be that my nail polish right now has quite a pumpkin feel to it…

Tomorrow is Halloween!

I’m not one to dress up and party, but I love the holiday for  its other traditions: pumpkin carving, hot apple cider, roasted pumpkin seeds and watching the anticipation build for kids with thoughts of trick-or-treating.

I enjoy carving pumpkins but I hadn’t carved one in years. I was inspired by some old photos of my parents just after they were married, they look so young and beautiful. I realized that we would look back on our photos in 31 years and think the same thing…so my husband and I decided to make it a tradition.

One of my favorite parts about carving pumpkins is roasting the seeds. They are so simple to prepare and serve as a great snack while you work on carving. You just toss them in a little olive oil and salt and bake them in the oven on 350F for about 15mins. YUM! Salty and crunchy- they remind me a little of popcorn.

Last Night

Yesterday was wonderful and Ida’s cake was a success (of course) filled with salt caramel and chocolate and the shape inspired by Ladyfest’s logotype. This photo was taken just before the club opened; it wasn’t untouched for long after that…

Igår var fantastiskt fint och Idas tårta fylld med salt karamell och choklad gjorde succé. Bilden tog jag precis innan klubben öppnade och tårtan var inte orörd många sekunder till efter det…

Pumpkin Muffins (just in time for Halloween!)

Halloween is just around the corner and I’ve been getting in the spirit by making pumpkin muffins! They were delicious and nutritious (I eat gluten, dairy and sugar-free) and filled the house with lovely smells of pumpkin and spice. The recipe is the result of testing a few different recipes and tinkering with them to suit my taste and dietary restrictions. Depending on where you live it may be hard to find all the ingredients I used in this recipe. But as an alternative, you can simply add a ½ cup of pumpkin puree and 1 Tbsp. cinnamon to any basic muffin recipe to get the same effect.

1/2 cup butter, melted

4 eggs, beaten

1 teaspoon vanilla

1/2 cup pumpkin puree

1/4 cup honey or maple syrup 

1/2 cup coconut flour

1/2 teaspoon baking powder

1 & 1/2 teaspoon cinnamon

1/2 teaspoon cloves

1/2 teaspoon allspice/nutmeg

pinch salt

stil it all together and....

 -Preheat your oven to 400 degrees F.

-Grease a standard muffin tray or use paper liners

-Combine wet ingredients in a large mixing bowl together until well beaten: butter, eggs, vanilla, pumpkin and honey/maple syrup.

-Measure dry ingredients into a sifter and slowly sift into the wet ingredients, whisking as you do so that you don’t have lumps in the batter.

-Divide the batter evenly into the muffin tins and bake for approximately 15-18 minutes or until slightly golden brown on top and a toothpick comes out clean.

My husband and I enjoyed our with a morning cup of coffee and they were moist and pumpkin-y delicious! All the talk of pumpkins got us in the Halloween mood and later in the day we carved a jack-o-lantern. I’ll post photos of that tomorrow as well as my favorite roasted pumpkin seed recipe!

Halloween är här och jag har bakat pumpa-muffins för att komma i rätt stämning. Receptet är gluten-, laktos- och sockerfritt och de blev hur goda och saftiga som helst. Min man och jag avnjöt dem till morgonkaffet och allt snack om pumpor fick oss på Halloween-humör så senare under dagen gjorde vi en pumpa-lykta. Bilder på den kommer i morgon (likaså mitt favoritrecept på rostade pumpakärnor). 

Ladyfest and Cards

Tonight Ladyfest Malmö, who struggles for a more equal culture stage by focusing on the ladies, celebrates their first birthday! My friend Ida (Bad Bake Day) is making their remarkable birthday-cake, which will be served at Club Retro tonight, and I’ve spent my morning making cards for her that shows the address to her blog.

It’s All About Chemistry

Becoming an engineer includes studying both enjoyable and less enjoyable subjects. For me, chemistry belongs to the last category. But today we made different laboratory experiments like measuring the pH of different soils and I actually thought it was quite interesting, weird enough (maybe it has something to do with everybody wearing the same glasses).

Att läsa till ingenjör betyder att studera både roliga och mindre roliga ämnen. Kemi tillhör det senare för mig. Men idag labbade vi och det var faktiskt ganska intressant (men tror det beror mycket på att alla såg så roliga ut i skyddsglasögon). 

Turning Over

This autumn I am especially aware of my place in this big beautiful world. Yesterday, on my afternoon walk I was reminding of the idiom “turning over a new leaf” (fig. to begin again, fresh; to reform and begin again.) While the etymology of this saying actual refers to turning the pages of a book, I couldn’t help but see the changes in the leaves as a reminder of shedding old, unnecessary bits about ourselves in order to make room for new life.

I promptly returned home and cleaned and reorganized my office/studio space. How nice to get rid of unnecessary clutter!

Den här hösten är jag särskilt medveten om min plats i den här vackra världen. Igår när jag promenerade kunde jag inte låta bli att tänka på att precis som löven ändrar färg och faller av behöver vi sortera bort och skapa ny plats i våra liv. Så jag gick hem och storstädade mitt kontor – hur skönt som helst! Fritt fram för nya projekt!
